You know you are a 90's baby if these Cosmic Brownies are giving you all the nostalgic feels! These homemade cosmic brownies are a classic take on the Little Debbie treat. It features a dense brownie with a simple chocolate ganache that is topped with cosmic sprinkles! I know the original is tough to beat but I guarantee you my brownie recipe is better. Get ready for thick fudgy brownies and loaded with chocolate flavor!
cosmic sprinkles*if you cannot find them, any type of rainbow sprinkles will do

Brownies
In the bowl of a stand mixer, add your melted butter, sugar, and brown sugar and beat until combined. Then add your eggs, corn syrup, and vanilla and beat on medium high for about 2 minutes.
Then add your cocoa powder, flour, and salt. Mix until combined.
Line a 9x9 baking dish with parchment paper, allowing the edges to hang over for easy removal.
Transfer your batter into your baking dish and spread out evenly. Bake your brownies at 350 degrees for 30 minutes.
Take out and let cool completely.
Chocolate Ganache
In a heat proof bowl, add your semisweet chocolate.
In a small sauce pan, heat your heavy cream on medium low heat until lightly simmering.
Pour your cream over your chocolate and let sit for 1-2 minutes. Then stir until the chocolate is completely melted and smooth.
Pour the chocolate ganache over your brownies and spread out evenly.
Sprinkle on your cosmic sprinkles while the ganache is still warm.
