This Apple Galette with puff pastry is what all your fall dreams are about. Juicy, crisp tart apples covered in cinnamon, all spice and nutmeg sitting on top of a brown sugar spiced butter and a flaky buttery puff pastry crust. This galette is going to fill your house with warm spells of cinnamon and apple and have it feeling like fall in no time. Serve it warm with some vanilla ice cream and caramel for the best desert yet.
So Fall is finally here! and I am not going to lie I am all about apple and pumpkin everything! give me a pumpkin spice latte and my fall decor and I am a happy girl. So of course my kitchen also has to smell like fall, so bring on the apples and cinnamon! I have already been apple picking twice this season! I know I told you I’m a bit crazy when it comes to fall. I mean why only go apple picking once when you can go twice? needless to say I have A LOT of apples and I have to use them up. So I am using up my last apples with this apple galette. This apple galette basically has all the same flavors and deliciousness as a classic apple pie without all the work.
HOW TO MAKE APPLE GALETTE WITH PUFF PASTRY
to make this apple galette with puff pastry it is very simple. first prep your puff pastry. then in a large bowl add your apple slices, lemon juice, brown sugar, cinnamon, all spice, nutmeg and clove. mix until combine. This is very important: let mixture sit for at least 30 minutes to let juices come out of the apples. Make sure to leave those juices behind or you will have a wet sloppy pastry. Next make the butter. it is key that your butter is softened. add your butter, brown sugar and spice t a small bowl and use a fork to smash and mix. Now assemble; make sure you do so in a lined baking sheet. start by spreading your butter into your puff pastry leaving a 1 inch boarder. assemble your apples on top of your butter leaving a 1 inch boarder. wrap your puff pastry edges onto your apples to create a crust. finish with an egg wash and bake! I like to serve it warm with ice cream and caramel!
HOW TO STORE APPLE GALETTE WITH PUFF PASTRY
I love to eat this warm, but if there is any left over I recommend slicing it up into individual servings and storing in an air tight container in the fridge. Then to warm it back up again, take out the slice you want to eat and bake it in the oven on a lined baking sheet at 375 degrees for 5 minutes. take out an enjoy!
APPLE GALETTE WITH PUFF PASTRY INGREDIENTS/ SUBSTITUTIONS
HONEY CRISP APPLES. So my all time favorite apple to bake with is honey crisp because it is the perfect balance of sweet and tart. but you can substitute this for any baking apple you desire like Granny Smith, Cortland, Fuji ect.
BUTTER. The layer of butter in this galette is key. It must be softened.
PUFF PASTRY. Traditional galettes are made with traditional butter pie crusts, and you can substitute this puff pastry for and pie crust recipe and it would be amazing. I recommend my go to pie crust recipe. But I chose to use puff pastry here because its quick easy and I love how flaky it is.
BROWN SUGAR. i use brown sugar for this because that molasses flavor adds so much depth to my galette. But you can use white sugar if you are out.
SPICES. I think this recipe has the PERFECT balance of fall spices including cinnamon, nutmeg, clove, and allspice. they all balance each other so well, working together to give you that perfect fall flavor. If you do not have all of these spice I recommend trying to get them for the best results, but at the very least make sure you have the cinnamon and allspice!
LEMON JUICE. I add lemon juice to preserve the color of the apples, to help extract some of the liquid from the apples and to add some much need citrus.

Apple Galette with Puff Pastry
Ingredients
Crust
- 1 sheet puff pastry
- 1 egg (for egg wash)
Butter Spread
- ½ cup salted butter
- ¼ cup brown sugar
- 2 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 teaspoon allspice
Apples
- 3 ½ Apples (honey crisp)
- 1 juice from 1 lemon
- 1 tablespoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon clove
- 1 teaspoon Allspice
- 1 cup sugar
- 1 tablespoon flour
Instructions
Crust
- Start by deforsting your puff Pastry for about 1 hour before baking. Once deforsted open up the sheet and place it on a baking sheet lined with parchment paper. Then gently roll it out using a rolling pin. set aside
Apples
- Start on your apples. Peel, core and slice all your apples. Slices should be thin, getting about 20 slices per apple.
- In a large bowl place your apples and lemon juice and toss together. Then add your cinnamon, nutmeg, clove, allspice, sugar, flour. Toss until evenly combined. Set aside and let rest for about 30 minutes to release juices.
Butter
- Make your butter mixture. in a small bowl add your softened butter, brown sugar, cinnamon, nutmeg, and allspice. Using a fork smash your butter and mix until combined. Set aside
Assemble
- Spread your butter on top of your puff Pastry leaving a 1 inch boarder around the edge. Place apple slices in a circular pattern on top of the butter, leaving an inch boarder around the edge. you can arrange these in any desired way. YOU MUST leave behind all the juices that are in the bowl. if you just dumb apples and juice into the crust you will have a sloppy mess.
- pull the edges of the puff pastry up around the apples creating a crust. Brush that crust with an egg wash.
- Bake galette at 375 degrees for 30 minutes.
- Serve warm with vanilla ice cream and caramel if desired.
