Key Ingredients and Substitutions
- RICE KRISPIES CEREAL. This cereal is the main ingredient! You do not need to use name brand cereal so just get any crispy rice cereal that you can find! If you want even more chocolate, you can use cocoa krispies!
- MINIATURE MARSHMALLOWS. I use mini marshmallows because they melt faster and I always like to put extra marshmallows to the side and mix those in (not melted) to add to the variety of texture.
- CHOCOLATE CHIPS. I use semi-sweet chocolate chips, but you can use any kind of chocolate chips or chocolate chunks you desire.
- CHOCOLATE COVERED PEANUTS. I love to use these because they add to the chocolate flavor but regular peanuts will be just as delicious. If you have a nut allergy, you can definitely leave these out.
- SALTED BUTTER. I use salted butter because I think that extra pinch of salt balances out all the sweetness and highlights the chocolate! You can use unsalted butter if you desire.
CHOCOLATE RICE KRISPIE TREATS STEP BY STEP INSTRUCTIONS
- In a large bowl add your rice krispie cereal, 1 cup of your mini marshmallows, chocolate chips, and peanuts. Mix until combined.
- In a medium sauce pan, add your butter and melt on medium heat until completely melted. Then immediately add your salt, the rest of your marshmallows, and cocoa powder to your pan. Mix vigorously and continuously until your marshmallows are completely melted and combined. Again, be sure to stir continuously so that your mixture does not burn! Once melted take off the heat.
- Let mixture cool for about 10 minutes at room temperature.
- Pour marshmallow mixture over your rice krispie mixture and stir until combined.
- Line a 9x9 inch baking dish with parchment paper. Allow the parchment paper to hang over the edges for easy removal.
- Transfer your crispy rice and marshmallow mixture into your baking dish. Use a spatula or your hand to press your rice krispies into the bottom of the dish.
- Place in the fridge and let chill for at least one hour.
CHOCOLATE DRIZZLE
- In a small sauce pan heat your heavy cream on medium low heat until lightly simmering.
- Place your chocolate in a heat proof bowl. Pour your hot cream over your chocolate. Let this sit for about 2-3 minutes. Then stir until completely melted and smooth.
- Using a spoon drizzle your chocolate over your rice krispies.
- Cut into 16 equal squares and enjoy!
BAKING TIPS
- Keep 1 cup of miniature marshmallows to the side. Add those in unmelted so that your rice krispie treats have a variety in texture!
- Keep stirring! Be careful because when melting your marshmallows they can burn easily. Make sure to keep a close eye on them!
- Chill! Make sure to chill your homemade crispy rice treats for at least one hour. Otherwise they will just fall apart.

So I recommend lining your baking dish with a piece of parchment paper that hangs over the edge. That way you can easily remove your treats after they chill!

I haven't tried this recipe yet with other cereals, so I am not sure, but if you are willing to experiment a little, I think a lot of other cereals could possibly work! Get creative! Maybe try Froot Loops or Cinnamon Toast Crunch!
