KEY INGREDIENTS AND SUBSTITUTIONS
- SALTED BUTTER. I like to use salted butter because that extra salt cuts through the richness of the chocolate and balances out your brownies. Using butter makes for super moist and fudgy brownies.
- SUGAR. White and brown sugar make for a super sweet and gooey brownie.
- EGGS. Without any leavening agent the eggs help the brownies rise slightly.
- VANILLA. Adds great flavor!
- CORN SYRUP. This is what creates the iconic Cosmic Brownie texture. You can leave it out if you don't have it.
- COCOA POWDER. This adds the decadent chocolate flavor and makes for a super fudgy chocolate brownie.
- FLOUR. I try not to add too much flour so that they stay fudgy. You need just enough so that they do not sink in the middle.
COSMIC BROWNIES STEP BY STEP INSTRUCTIONS
Brownies
- In the bowl of a stand mixer,combine your melted butter, sugar, and brown sugar and beat until combined. Add your eggs, corn syrup, and vanilla and beat on medium high for about 2 minutes.
- Then add your cocoa powder, flour, and salt. Mix until combined.
- Line a 9x9 baking dish with parchment paper, allowing the edges to hang over for easy removal.
- Transfer your batter into your baking dish and spread out. Bake your brownies at 350 degrees for 30 minutes.
- Take out and let cool completely.
Homemade Chocolate Ganache
- In a heat proof bowl, add your chocolate.
- In a small sauce pan, heat your heavy cream on medium low heat until lightly simmering.
- Pour your cream over your chocolate and let sit for 1-2 minutes. Then stir until the chocolate is completely melted and smooth.
- Pour the ganache over your brownies and spread out evenly.
- Sprinkle on your cosmic sprinkles while the frosting is still warm.
- Let the frosting set. Enjoy!
BAKING TIPS
- To make your chocolate ganache frosting, make sure to let your hot cream sit with your chocolate BEFORE you start stirring. This allows the temperature of the chocolate to rise and will prevent your ganache from breaking.
- When adding your eggs to your butter mixture, make sure you are constantly stirring, otherwise you may cook your eggs.
- When you line your pan with parchment paper, make sure to leave the paper hanging over the edges to help with easy removal.

Cosmic sprinkles are basically mini chocolate chips that are coated with bright colors. They are the reason this dessert is so iconic!
Where can I find cosmic sprinkles?
They are super hard to find! I had to order mine off of Amazon because I could not find them in my local grocery stores. If you are not able to find them, you can use any type of rainbow sprinkles.
Do I need to use corn syrup? What does it do?
The short answer is no, you do not need to use corn syrup if you do not want to or don't have it in your pantry. The corn syrup makes the brownies a little fudgier and denser.
MAKING AHEAD OF TIME
You can make the batter up to 3 days in advance and store it in the fridge. Before you want to bake them, just make sure to take the batter out and let it get to room temperature.
STORING AND FREEZING
These cosmic brownies should be stored in an air tight container for up to 3 days. If freezing the batter, place in a freezer bag and freeze for up to 3 months.

I madera them...they were really good! I do have a good brownie recipe and now I don't know which one to keep. At first, when they were in the oven, I wasn't sure they were cooked. After 35 minutes, I decide to take them out because they were supossed to be fudgy and they really are. I am so happy with the outcome!
