    Thin Mint Brownies

    This is currently the best time of year. No I'm not talking about the beautiful weather or the fresh smell of Spring....I am talking about GIRL SCOUT COOKIE SEASON!! And these Thin Mint brownies taste just like my all time favorite girl scout cookie, THIN MINTS. No these brownies do not have actual thin mint cookies in them, rather they are made to taste like a Thin Mint in brownie form. They are gooey and fudgy and decadent with the perfect amount of mint flavor and toped with the iconic chocolate ganache that Thin Mints are known for.

    So when I was a child I was a girl scout. But the truth is I was only in it for the cookies! Back then girl scout cookies used to be hard to come by. Usually you had to be lucky enough to live near a girl scout. Now a days these girls have it so easy! No more walking door to door and instead people flock to them at the local grocery store. But to be honest I don't hate it because I am always the first one in line. Don't judge me! I'm just supporting young female entrepreneurs!!

    One of my favorite flavor combinations is chocolate and mint. I think the best thing about Thin Mints is that they are the perfect balance of chocolate and mint...not too much but just enough. These Thin Mint brownies are everything: chocolatey, fudgy, and rich with a gooey center and the perfect hint of mint in the back. I know mint extract can be overpowering or even off putting at times but don't worry, I have perfected the amount of mint flavor in this recipe.

    HOW TO MAKE FUDGY GOOEY BROWNIES

    The key to fudgy brownies is to not add too much flour and to add a lot of melted chocolate and of course...a lot of butter! These brownies are just that but I have a recipe for even fudgier gooey brownies and you can find that recipe here.

    Ingredients
      

    Brownies

    • 1 cup salted butter
    • 1 ½ cups semi sweet chocolate chips
    • 3 eggs
    • 1 ¼ cups sugar
    • 1 tbs vanilla
    • 1 ½ cups flour
    • ½ cup coco powder
    • 1 teaspoon salt
    • 2 tsp mint extract

    Frosting

    • 1 ½ cups semi sweet chocolate chips
    • ½ cup salted butter
    • 1 tsp mint extract

    Instructions
     

    Brownies

    • In a double boiler, melt your butter and chocolate chips. Set aside to cool.
    • In a large bowl, mix your eggs, sugar, vanilla and mint extract. Add your chocolate mixture to your egg mixture.
    • Add your flour, cocoa powder, and salt.
    • Pour your batter in a lined 9x9 baking dish. Bake brownies at 350 degrees for 25 minutes.

    Frosting

    • Over a double boiler, melt your butter and chocolate. Add your mint extract.
    • Pour your chocolate over your cooled brownies.
    • Let your chocolate cool and then cut and serve!
