    Fruity Blackberry Jam Bars

    Making this Friday a little extra sweet with my all time favorite Blackberry Jam Bars . These bars are crumbly, buttery and sweet. They are layered with fresh juicy blackberry jam and then topped with more sugary crumbly goodness. They are super easy to make and are made with some simple pantry ingredients: oats, flour, sugar, salt, and really any flavor jam you have on hand. I personally happened to have a lot of left over jam from my homemade blackberry jam recipe that I wanted to use up.

    So spring is finally here and summer is not too far away and I get so excited for this time of year because of all of the fresh fruits and berries. Fresh blackberries, raspberries, blueberries...you can't name a berry that I do not love! Every time I go to the market I just want to leave with all the peaches, berries, melons....and since its fruit it's guilt free right? So of course all of these summer and spring fruits really inspire me to make delicious new baked goods.

    A few weeks ago I saw blackberries in the market for the first time this season and I got super excited! I may have bought like 5 plus containers....So the only thing I could do was make a big pot of homemade blackberry jam and I did just that. Nothing screams spring more than a big pot of jam simmering on the stove. Now homemade jam is way easier than you think. It only takes a few minutes on the stove. This jam is amazing on anything but if you have a little extra like me, you can use it to make these delicious blackberry jam bars!

    HOMEMADE JAM VS. STORE BOUGHT

    Once I started making my own jam I will never go back to store bought. Those store bought jams are no where near as fresh and fruity, and not to mention they are packed with high fructose corn syrup and food coloring. But of course you can use either homemade jam or store bought jam for this recipe and any flavor jam you want as well. If you choose to go homemade, try out my recipe here!

    HOW TO MAKE THE CRUMB TOPPING

    So you know that crumb topping on the top of coffee cakes? Well this bar is literally made up of just that on both the top and bottom! The best part about this recipe is that I only need to make one mixture and then I divide it into two and use it for the bottom crust and the crumb topping! This works as a super easy short cut and also gives you more delicious brown sugar crumb. A simple crumb topping is made with four classic ingredients: flour, oats, sugar and butter. You mix it all together and you're done. See so simple! When placing the bottom layer, press it into the bottom of the pan. When placing the top crumb on your bars, make sure to squeeze your mixture together a little to create those large crumbs that everyone loves so much.

    HOW TO STORE YOUR BLACKBERRY JAM BARS

    Place your bars in an air tight container and store in the fridge for 3 days or in the freezer wrapped in wax paper and in an air tight container for 3 months.

    Fruity Blackberry Jam Bars

    Ingredients
      

    • 1 ¼ cups flour
    • 1 ¼ cups oats
    • ½ tsp salt
    • ½ teaspoon baking soda
    • ½ cup sugar
    • ½ cup brown sugar
    • ¾ cup melted butter
    • 1 teaspoon vanilla
    • 2 cups blackberry jam (or any flavor of your choice)

    Instructions
     

    • In a large bowl combine your flour, oats, salt, baking soda, sugar, and brown sugar.
    • Add your melted butter and vanilla. Mix until combined.
    • Divide your crumb mixture evenly in half.
    • Line a 9x9 inch baking pan with parchment paper. Press the first half of your mixture into the bottom of your pan.
    • Bake your crust at 325 degrees for 12 minutes. Take out and let cool slightly.
    • Spread your jam evenly over your crust.
    • Add the remaining half of your crumb mixture to the top of your jam, leaving some bigger chunks of crumb.
    • Bake again at 325 degrees for another 20 minutes.
    • Let cool and enjoy!
