    Strawberry Lemonade Vegan Smoothie Bowl

    Looking for a delicious summer dessert? Try out this thick and refreshing vegan smoothie bowl featuring strawberries, bananas, and lemon juice, finished off with a chocolate shell!

    This vegan smoothie bowl is as thick and creamy as ice cream but without the dairy! It embodies summer in a bowl!

    WHY YOU WILL LOVE THIS RECIPE

    • It is super healthy but it doesn't taste like it!
    • It tastes and feels like ice cream without all of the calories or dairy!
    • It is so refreshing and light and perfect for the summer!

    KEY INGREDIENTS AND SUBSTITUTIONS

    FROZEN STRAWBERRIES. I love strawberries in the summer! You can replace these with any frozen fruit as long as it is the same amount and they are frozen. Pick your favorite!

    FROZEN BANANAS. The bananas give this vegan smoothie bowl its thick and creamy consistency. I recommend NOT replacing these.

    LEMON JUICE. I love a splash of lemon juice in this recipe because it goes so well with the strawberries, giving it that strawberry lemonade flavor. But feel free to leave this out if desired.

    MILK. I use oat milk for that super creamy texture. Do not add too much or your smoothie will be too thin! Feel free to replace this with any kind of dairy free milk as well such as almond milk or cashew milk.

    ALMONDS. These nuts are so amazing and they give this smoothie a creamy crunchy texture so I highly recommend them. If you don't like the idea of your smoothie bowl being crunchy, you can replace this with a scoop of almond butter or peanut butter.

    CHOCOLATE SHELL. This chocolate shell is so nostalgic and so much fun! Plus who doesn't love chocolate on everything! If the shell seems like too much work, then feel free to just sprinkle a few vegan chocolate chips on top of your vegan smoothie bowl!

    STEP BY STEP INSTRUCTIONS

    Smoothie Base

    • In a blender add your frozen strawberries, frozen bananas, lemon juice, almonds, and oat milk. Blend until combined and smooth.
    • Pour smoothie out into a bowl

    Chocolate Shell

    • In a small microwave proof bowl add your vegan chocolate chips and vegetable oil. You can use a chocolate bar also but make sure to chop it into small chunks. Microwave for 15 seconds, stir and microwave for an additional 15 seconds. Take out and stir until all chocolate is melted.
    • Pour Chocolate over your smoothie and spread out.
    • Place smoothie bowl in the freezer for 5 minutes to let the chocolate set.

    Toppings

    • Place desired toppings onto chocolate shell.
    • Break open and dig in!

    EXPERT TIPS

    1. Use the best blender you have so that you do not have to add that much milk, keeping your smoothie super thick! I like to add my milk slowly. Depending on the quality of your blender you may have to add a little less or a little more milk.
    2. Make sure all of your fruit is fully frozen before you start or the smoothie will not be thick.
    3. Pop your bowl in the freezer before you start making your smoothie. That way when you pour your smoothie into your bowl it will help keep it frozen!
    4. Let your chocolate shell cool slightly before pouring it onto your smoothie. If you pour this on piping hot it will melt your smoothie.

    FAQ

    Can I replace the vegetable oil with something else?

    You can replace it with the same amount of coconut oil or vegetable shortening.

    Can I use other types of milk?

    Absolutely! You can use whole milk or any type of nut milk you desire. I have made this recipe with cashew milk and it turns out perfect!

    Can I use fresh fruit instead of frozen fruit?

    You can but it will not have a thick and creamy consistency. It will probably turn out more like a juice than a smoothie (which is probably still delicious!).

    Ingredients
      

    Smoothie

    • 1 cup frozen strawberries
    • 1 cup frozen bananas
    • juice of ½ a lemon
    • ½ cup almonds I use Skinny Dipped Strawberry Lemonade almonds for extra strawberry lemonade flavor!
    • ½ cup oat milk

    Chocolate shell

    • ¼ cup vegan chocolate chips you can use a chocolate bar too but remember to cut it into small pieces so that it can melt in the microwave
    • 1 tablespoon vegetable oil

    Toppings

    • fresh strawberries
    • coconut shavings

    Instructions

    • In a blender add your frozen strawberries, frozen bananas, lemon juice, almonds, and oat milk. Blend until combined and smooth.
    • Pour smoothie out into a bowl.

    Chocolate Shell

    • In a small microwave proof bowl add your vegan chocolate chips and vegetable oil. Microwave for 15 seconds, stir and microwave for an additional 15 seconds. Take out and stir until all of the chocolate is melted. Let cool for a minute.
    • Pour chocolate over your smoothie and spread evenly.
    • Place smoothie bowl in the freezer for 5 minutes to let the chocolate set.

    Toppings

    • Place desired toppings onto chocolate shell.
    • Break open and dig in!
